A small excerpt "More on Trans fats" from my blog.
However, have you ever wondered about
the recent invasion of fried pop chicken or teriyaki chicken and a
countless other forms of prepared chicken, pork ribs, pizza and
more? All appeared utterly delicious to the eye, because we can
never detect the presence of that whitish oil in the food.
This is because the hydrogenated oil is fully absorbed into that
piece of nugget
or french fry and you cannot see it but taste that
wonderfully new delicious flavour, that we or our mothers can never
replicate at home. No wonder there is an increase in the number of
people eating out and popping processed food in the toaster or
microwave.
But beware, not all nice to look at and eat is good for our health.
The increase in heart diseases, type II diabetes and high
cholesterol due to trans fat is on the raise. One example of the
effects of trans fats vs saturated fats came from the "Walter
Willett Nurses Study" (Professor of Medicine, Harvard Medical
School). The study of 80,000 women concluded that a 2% increase in
trans fats increased a woman's risk of heart disease by 93%, while
the same study found that a 5% increase in saturated fats increased
heart disease risk by 17%. . Some clinical studies suggest a
possible association of trans fatty acids with obesity, metabolic
syndrome and diabetes. Trans fat behaves like saturated fat by
raising the level of low-density lipoprotein in the blood (LDL or
"bad cholesterol") which increases the risk of coronary heart
disease (CHD). It has the additional effect of decreasing levels of
HDL, the "good" lipoprotein which helps remove cholesterol from
arteries.
