Popeye's at Changi Airport T1 has got good mashed potatoes &
cajun fries.
Kenny Rogers used to be pretty good with the mashies too, but not
anymore. 
What about sweet potato? I like sweet potato soup with ginger
slices, steamed sweet potato, baked sweet potato with skin, sweet
potato cake...
