before you pour the beaten egg into
the wok, make sure the oil in the wok is heated already, than pour
the egg into it. (if you notice the difference, when you pour oil
into wok without heating, you try to make sure the oil
leaving rice over night is a usual
practice, but if you did read up one of the post previously posted
bout facts of cancer or something like that, i remember someone
said overnight rice can cause cancer.
there are ppl who cook the rice, leave it to dry in front of the
fan, that will also dry the rice already what, why need to be so
troublesome?
you morning cook the rice, evening after it is blown dry, the
effect is also the same and infact better
if you know how to control the fire,
something which i observed when i in hotel looking at chief cooking
fried rice. when they just pour in the rice, strong fire used to
cook the rice hot and spread the rice which has sticked together,
once the rice are spread evenly and jumping around in the wok (due
to heat) than lower down the fire to small to add coloring (dark
soy sauce) medium fire will do also.
