the burning of the stuff removes most of the alcohol.. it's the
alcohol that burns...
what remains is faintly alcoholic and has the fragrance of
brandy...
maybe don't let it soak into the pudding.. just use the little
sauce tin thing, set the brandy on fire, then pour it onto the warm
pudding
