maybe the cocoa powder made the mixture too dry so it cracked when you baked ?

low-fat milk less fats so maybe less oil to keep the thing together.

and erm i think low fat milk prob easier to spoil Laughing

when baking muffins, you must think of them as minicakes.
Don't skimp on the liquids just because they are small. They need more liquid ingredients as they dry out very quickly.

when i bake cheesecake, i use a 'double boil' method...

as in, i wrap up the pan with aluminium foil, put inside a tray filled with some water.. so that the cake will not turn out dry and cracky.. will turn out smooth and soft.

haven try baking muffins before, so duno whether it will work the same..

envy u girls... got time to bake..

i definitely wun have the time and energy to bake this week..

the water helps regulate the temperature.

if you are too free, just release the door/open the cover now and then to lower the temperature.

only leave the cover ajar after baking..

juz open a bit.. for cooling..

coz if u open in the midst of baking, the temperature will change.

some people like to open the open door during baking to kaypoh and see see...then they whine why their cake/etc not cooked properly one..etc

put a tray of water below the grille right ?

wrap the base of the pan only.... so that water will not slip in...

then put the pan on a tray filled with some water, and place the tray with the pan in it on the grille.

how to put water below the grille?
