They use all English textbooks from primary up to University.
But in primary schools and high schools, the language of
instruction is actually cantonese. So they use English text books
(for all subjects except Chinese) but the the teachers'
instructions and students' discussions are in cantonese.
Also, hong kongers don't speak English to each other.
