Actually I like to sub tofu with tau huey for mapao tofu too
Just cook the mapao tofu sauce, and you buy something really nice
and smooth tau huey without the sugar syrup and drain off all the
water.
Pour the mapao tofu sauce over and I think it's even more shiok
than eating it with silken tofu.
