Prata party, anyone?: Soak up chicken and mutton curries with Phoenix Garden Cafe's famous roti prata.

The Phoenix Garden Cafe in Hotel Phoenix. It struck gold in the 1990s with its roti prata, which still remains one of the best you can get in an air-conditioned eatery.

It was voted one of the top five favourite dishes in a public poll in 1996 held in conjunction with the Singapore Food Festival that year.

The roti prata, served with chicken and mutton curries, is available as part of its daily international buffet.

But over the years, the buffet has been beefed up with even more signature items. The chicken rice is another staple that appears in the spread every day.

Then there are other items such as laksa and mee siam that alternate with each other. Laid out for self-service, you decide what toppings to add.

For the laksa, for example, you can add pieces of poached chicken from the chicken-rice counter or prawns and salmon from the seafood section.

And for dessert, what is destined to be another classic attraction is the durian mousse cake. Moist and rich with durian pulp, each mouthful is almost as good as eating the fruit itself.

Adding variety to the buffet is an array of salads, soups and hot dishes which are changed daily. But it's the staples that have made the cafe the place to go for good local fare.

Just like the good old days: Savour home-styled dishes that come in tiffin carriers at Cafe 2000.

For this month, as part of Singapore's 40th birthday celebrations, the eatery is featuring a tiffin promotion with home-styled dishes that remind you of Mum's cooking.

Better known as tingkat, tiffin carriers were once de rigueur for workers who often packed their lunches to work.

Comprising several tiers, these containers were ideal for carrying different dishes.

What I find quaint about Cafe 2000's promotion is that the dishes are actually served in a four-tiered tiffin carrier.

The rice is in one of the tiers while the other three contain dishes such as spicy deep-fried chicken, sambal prawn or ikan bilis petai.

A soup and a dessert come in separate bowls.

The whole set costs $16. But you can order two carriers, which are enough to be shared among three people, for $28.

The meal also includes a free flow of teh tarik, which comes in a stainless steel container.

While the nostalgia factor will strike a chord with babyboomers, what is really attractive is the great price and the homely cooking.

And there is something to be said for celebrating the birthday of this nation of food lovers by bringing back some of its culinary memories.

If you like your crabs small, the New Signboard eatery in Geylang is your kind of place.

Unlike other seafood restaurants that serve mainly huge mud crabs of 1kg or more, it specialises in crabs that weigh about half a kilogram.

You have a choice of about 20 style of cooking methods, including the common chilli and black pepper crabs as well as more unusual dishes like crab congee and crab curry.

You can either choose to pay $18 for every kilogram of crabs you consume or $8 per crab. There is no charge for the cooking.

For those who like their crabs meaty, the non-airconditioned eatery does stock some of the big varieties. Some people, however, say small crabs have smoother meat and are sweeter.

If you want a change from the usual champagne brunches on Sundays, the Four Seasons Hotel's new Weekend Oriental Brunch may be your cup of tea.

Held at Jiang-Nan Chun on Saturdays (11.30am to 2.30pm) and Sundays (10.30am to 3pm), this is a typical Cantonese meal of dimsum items and dishes such as spare ribs flavoured with orange sauce and braised sea cucumber with seafood.

There are 100 items on the menu. Priced at $48 for adults and $25 for children, it includes a free flow of Chinese tea and fruit juices.

If you want a free flow of champagne, just add $40 per person.

The price is not cheap, but you do not get inferior food at the Four Seasons. All the dishes are served the same way as a la carte orders, instead of being laid out on a buffet spread.

Tucked away in a corner of King's Arcade, this cosy restaurant is a favourite among the residents along that stretch of Bukit Timah road.

The menu, which is changed every four to six months, offers 91 items and servings are small to enable diners to partake a wider variety of the food. From Mondays to Thursdays, every two adult buffet dinners come with a free item that is not found on the buffet menu.

An a la carte menu is available for those who do not wish to have the buffet.

This five-year-old restaurant is a pioneer of the Japanese buffet concept. Owned by Mr Charlie Koh, it is packed most of the time as it can seat only 108 diners. Expect a two-week waiting list for reservations.

Salmon is popular here and the restaurant goes through 1.2 tonnes of the fish a month.

Apart from more than 80 items on the buffet menu, Mr Koh occasionally offers diners free seafood soup and some new creations.

The 44-seater restaurant is three years old but its buffet started only two years ago. The place has a regular crowd, which includes a number of Japanese customers.

The menu has 85 items available, including fresh oysters, which is limited to two per person. Another interesting item on the sashimi menu is Kajiki Maguro (sword fish belly), which is not commonly found.

The menu is changed occasionally according to customers' preferences.

The brainchild of the operators behind the Fiesta and Kuriya Japanese restaurants, Kuishin-Bo has been around for more than four years. Its buffet was introduced in April last year. It can seat 200 diners and reservation is strongly advised.

Mr John Yek, the division manager, said: 'For restaurants, it is simple. It boils down to the food and that is why it is important for us to maintain the quality.'

Under the supervision of a Japanese master chef, the buffet boasts over 100 items, including the popular kaminabe (Japanese paper pot) and expensive delicacies such as snow crab.

Every 30 minutes, an announcement is made for limited special items, and diners rush to queue for it.

The food is served buffet style, where diners pick their own food from the spread, which changes monthly.

If you were impressed by London chef Vineet Bhatia's cooking during his visit to Rang Mahal last year, you can go for his encore performance there this week.

The chef, who runs the much-awarded Rasoi Vineet Bhatia in London as well as other eateries in Mauritius, Dubai and Moscow, is in town for a promotion till Thursday.

He is known for his original creations that are based on classic Indian cooking traditions.

Some of his dishes that you can taste are wild mushroom and roasted cumin soup with truffle oil, crispy masala duck and grilled lobster with ginger and chilli.

Lunch tasting menus are priced at $55 per person while the dinner degustation menu is at $110 each. You have a choice of vegetarian and non-vegetarian menus.

PIGGY'S BIRTHDAY MENU
Iggy's one. And to celebrate, the restaurant owned by Ignatius Chan at The Regent Singapore has come up with a special 12-course menu that will be available from Thursday to Sept 15.

The menu is compiled from the many original creations the restaurant has come up with over the past year. Iggy's food is often inspired by what Chan himself eats on his travels abroad.

For the anniversary menu, dishes include interesting items like cold somen tossed in classic caviar condiments; steamed foie gras with tofu in a ponzu scented jus and truffle bun; and Sakura ebi cappellini with konbu and home-made scampi oil.

Each dish offers an interesting mix of flavours and textures that you won't find anywhere else.

The menu is priced at $120, which is lower than the $150 the restaurant normally charges for its smaller, 10-course menu.

Each dish comes in bite-sized portions but there is definitely enough to fill you up.

Be sure to block off at least a couple of hours to enjoy the meal. This is not something to hurry over.

NEW AND SIMPLE
A new eatery in Wheelock Place is simply called The Simple Life, which has a nice ring to it.

Opened on July 1 by the people behind Fish & Co, it serves local hawker fare such as kueh paitee, tahu goreng, chicken rice and prawn noodle soup in modern, air-conditioned surroundings.

Prices range from $5.90 to $6.90 for starters and $8.90 to $13.90 for main courses. Main dishes like chicken rice and nasi lemak come with a choice of local drinks such as bandung, calamansi and barley.
